Sautéed Kale and Golden Tahini Sauce

It’s time to start garden planning and with that in mind I need to start clearing out the freezer to make room for this years harvest. I had an abundance of frozen kale and found this delicious recipe that takes less than 30 minutes, tastes delicious and is super healthy! Enjoy and let me know how it goes.

Recipe for 4 servings:

Part 1: Golden Tahini Sauce
1/2 tsp cumin
1/4 tsp whole mustard seed (ground up to a powder using a spice blender or mortar and pestle)
1 Tbls sesame oil
1/2 tsp turmeric (good for inflammation and makes the sauce a beautiful color)
1/2 cup tahini
1/2 cup milk (your choice - I used almond)
1/2 Tbls lemon juice
1/2 tsp Himalayan salt

1. Heat sesame oil on medium heat and add in all the spices. Sauté for 90 seconds, stirring
2. Turn to heat to low and add tahini and milk, stirring well for 3 minutes
3. Remove from heat and add in lemon juice and salt and put to the side

Part 2: Kale Sauté
1 bunch of kale (fresh or frozen)
1 Tbls sesame oil
1/2 tsp cumin
1/4 tsp mustard seeds (ground up)
1/8 tsp black pepper
pinch of cayenne pepper (optional)
1/4 cup water
1/8 tsp salt
1 tsp lemon juice

1. Chop or cut kale into thin strips
2. Heat sesame oil over medium heat and add in all the spices. Sauté for 90 seconds, stirring
3. Add kale and coat with oil
4. Add water and cook uncovered for 5-7 min until kale is moist and tender
5. Take off heat and mix in the prepared Golden Tahini Sauce until all the kale is coated
6. Stir in the lemon juice and salt
7. Serve over rice, quinoa, noodles or eat it on its own. I went with a wild rice/quinoa mix.
